Buffalo-style Chicken Penne Pasta

A spicy and delicious take on the original.

Ingredients:

1 lb penne pasta
1 lb chicken breasts, diced
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons paprika
2 tablespoons olive oil
1 cup chopped celery
3 tablespoons hot sauce
1 cup mayonnaise
1/2 cup ranch dressing
3/4 cup milk
1/2 cup blue cheese

Directions:

  1. Follow package directions to cook pasta. Drain water and return pasta to pot.
  2. Evenly season the chicken with salt, pepper, garlic powder and paprika.
  3. Heat 1 tablespoon of olive oil in skillet over medium-high heat. Once skillet is hot, place chicken in and cook until no longer pink.
  4. Add 2 tablespoons of hot sauce and cook for an additional minute. Remove chicken from skillet.
  5. Pour the remaining olive oil into the skillet. Add celery and cook for about 2 minutes. Turn off heat and return the chicken to the skillet.
  6. Combine the mayonnaise, ranch dressing, milk and the remaining hot sauce in a small bowl. Stir until thoroughly mixed.
  7. Pour the sauce into the skillet covering the chicken and celery. Bring to medium heat and cook until sauce is hot.
  8. Add the cooked pasta to the skillet and toss to combine.
  9. Transfer to serving plates, top with blue cheese and enjoy!
