Dijon Pork Tenderloin Tips





Serves 12 |
Superbly tender with a wonderful flavor.
Ingredients:
2 pork tenderloins, 12 oz each |
Salt, to taste |
Ground black pepper, to taste |
Dried thyme, to taste |
1 tablespoon butter |
1/4 cup pure maple syrup, plus 1 tablespoon |
1/4 cup apple cider vinegar |
4 tablespoons Dijon mustard |
1/2 cup mayonnaise |
Directions:
- Preheat the oven to 375° F.
- Season pork tenderloin with salt, pepper and thyme. Set aside.
- In a large skillet, heat the butter over medium high heat. Once the butter is melted, add the pork tenderloin. Cook for 6-8 minutes, until golden brown on all sides. Remove from skillet and set aside.
- In a small bowl, combine 1/4 cup maple syrup, apple cider vinegar and 2 tablespoons Dijon mustard. Stir together well.
- Add mustard mixture to the skillet and bring to medium heat, stirring until the sauce is reduced by half.
- Return the pork to the skillet and turn to coat evenly. Place the skillet in the preheated oven and roast for 20 minutes.
- Remove from the oven and transfer the pork to a cutting board. Let the pork rest for 10 minutes before slicing.
- In a small bowl combine the mayonnaise, 1 tablespoon maple syrup, 2 tablespoon mustard. Serve as a dipping sauce for the pork.
