Dijon Pork Tenderloin Tips

Superbly tender with a wonderful flavor.

Ingredients:

2 pork tenderloins, 12 oz each
Salt, to taste
Ground black pepper, to taste
Dried thyme, to taste
1 tablespoon butter
1/4 cup pure maple syrup, plus 1 tablespoon
1/4 cup apple cider vinegar
4 tablespoons Dijon mustard
1/2 cup mayonnaise

Directions:

  1. Preheat the oven to 375° F.
  2. Season pork tenderloin with salt, pepper and thyme. Set aside.
  3. In a large skillet, heat the butter over medium high heat. Once the butter is melted, add the pork tenderloin. Cook for 6-8 minutes, until golden brown on all sides. Remove from skillet and set aside.
  4. In a small bowl, combine 1/4 cup maple syrup, apple cider vinegar and 2 tablespoons Dijon mustard. Stir together well.
  5. Add mustard mixture to the skillet and bring to medium heat, stirring until the sauce is reduced by half.
  6. Return the pork to the skillet and turn to coat evenly. Place the skillet in the preheated oven and roast for 20 minutes.
  7. Remove from the oven and transfer the pork to a cutting board. Let the pork rest for 10 minutes before slicing.
  8. In a small bowl combine the mayonnaise, 1 tablespoon maple syrup, 2 tablespoon mustard. Serve as a dipping sauce for the pork.
