Cucumber, Feta and Tomato Salad

Serves 2 | 
Each bite is light and highly flavorful.

Ingredients:

2 cucumbers, peeled and sliced
2 tomatoes, cored and sliced
2 tablespoons red wine vinegar
3 tablespoons olive oil
Salt, to taste
Ground black pepper, to taste
Crumbled feta cheese, to taste

Directions:

  1. Combine sliced cucumber and tomatoes in a salad bowl. Season with salt and pepper.
  2. Add vinegar and olive oil to the bowl and toss to coat.
  3. Sprinkle on feta cheese over and enjoy!
