Pear and Arugula Salad with Maple Vinaigrette Dressing





Serves 4 |
Craving something sweet and healthy?
Ingredients:
1 pear, thinly sliced |
8 cups arugula leaves |
1 tablespoon maple syrup |
2 tablespoons extra-virgin olive oil |
1 tablespoon Dijon mustard |
1 tablespoon red wine vinegar |
1/2 cup blue cheese crumbles |
1/4 teaspoon kosher salt |
1/8 teaspoon black pepper |
Directions:
- Whisk together mustard, maple syrup and vinegar; season with salt and pepper.
- Continuously whisking, add the olive oil in a slow, steady stream. Set aside.
- Arrange arugula on individual salad plates. Top with sliced pear and crumbled blue cheese.
- Drizzle with vinaigrette and serve.
