Melon Ambrosia Salad





Serves 4 |
Ingredients:
1 cup cantaloupe, 1/2" cubes |
1 cup honeydew, 1/2" cubes |
1 cup seedless grapes, halved |
1/3 cup fresh lime juice |
2 Tbsp. sugar |
2 Tbsp. honey |
1/4 cup flaked coconut, toasted |
2 Tbsp. fresh mint, chopped |
Directions:
- In a large bowl, combine the cantaloupe, honeydew and grapes.
- In a separate bowl, combine the lime juice, sugar and honey; pour over fruit, tossing gently to coat.
- Cover and refrigerate for 1 to 2 hours.
- Sprinkle salad with coconut and mint. Serve.
