The Perfect Roasted Chicken

Crisp on the outside, tender and juicy on the inside.

Ingredients:

+ Add All Ingredients to Shopping List
Kosher salt, to taste+ Add to Shopping List
1 lemon, sliced thin+ Add to Shopping List
8 lb whole chicken+ Add to Shopping List
Fresh rosemary, for seasoning+ Add to Shopping List
Ground black pepper, to taste+ Add to Shopping List
Fresh thyme, for seasoning+ Add to Shopping List
2 tablespoons olive oil+ Add to Shopping List

Directions:

  1. Preheat oven to 425° F. Arrange rack in the middle of the oven.
  2. Dry chicken with paper towels.
  3. Drizzle olive oil over chicken, rub in well. Generously season with salt and pepper.
  4. Place rosemary, lemon and thyme inside chicken.
  5. Place chicken breast side up in roasting pan. Cook for 20 minutes. Then reduce heat to 375° F. Cook for additional 60 minutes.
  6. Remove chicken from oven. Let cool for 20 minutes before carving.
