Orange-Ginger Shrimp

A citrus infised dish that's absolutely delicious!

Ingredients:

+ Add All Ingredients to Shopping List
1 tablespoon vegetable oil+ Add to Shopping List
2 tablespoons soy sauce+ Add to Shopping List
2 tablespoons rice vinegar+ Add to Shopping List
2 tablespoons minced green onions+ Add to Shopping List
1 tablespoon minced fresh cilantro+ Add to Shopping List
1 tablespoon peeled and minced ginger+ Add to Shopping List
1 red chile, minced+ Add to Shopping List
2 tablespoons orange zest+ Add to Shopping List
4 tablespoons fresh orange juice+ Add to Shopping List
1 lb. shrimp, peeled and deveined+ Add to Shopping List
2 oranges, peeled, cut in half and quartered+ Add to Shopping List
8 wooden skewers, soaked in water for 30 minutes+ Add to Shopping List
Cooking spray+ Add to Shopping List

Directions:

  1. Put vegetable oil, soy sauce, vinegar, green onions, cilantro, ginger, red chile, orange rind, and orange juice in a bowl; whisk to combine.
  2. Add shrimp to bowl, toss to coat, and then cover bowl. Place bowl in refrigerator and marinate for 15 minutes. Remove shrimp from dish, and reserve marinade.
  3. Alternately thread shrimp and orange quarters onto each of 8 wooden skewers.
  4. Coat a large grill pan with cooking spray, and then heat grill pan over medium-high heat.
  5. Place skewers onto grill pan; cook 4 minutes per side or until done. Baste with reserved marinade while cooking.
