Tzatziki Chicken Salad





Serves 4 |
A delicious Mediterranean twist on a classic.
Ingredients:
| 1 cup plain Greek yogurt |
| 3 tablespoons fresh lemon juice |
| 1 cup shredded cucumber |
| 1 tablespoon chopped dill |
| 1/2 teaspoon garlic powder |
| Kosher salt, to taste |
| Ground black pepper, to taste |
| 4 cups shredded chicken |
| 3 oz feta cheese, crumbled |
| 1/4 cup kalamata olives, chopped |
| 2 tablespoons chopped flat leaf parsley |
| 1/4 cup finely chopped red onion |
| 4 pitas, toasted |
Directions:
- Create the tzatziki sauce by adding the Greek yogurt, lemon juice, cucumber, dill and garlic powder to a mixing bowl. Season with salt and pepper. Stir together until well combined.
- Add the chicken, feta, kalamata olives, parsley, and red onion to the tzatziki sauce.
- Fill the pitas with the chicken salad and enjoy.
