Honey Chipotle Cauliflower Chickpea Tacos

Serves 8 |
One of the yummiest vegetarian tacos.
Ingredients:
2 tablespoons finely chopped chipotles in adobo sauce |
2 tablespoons avocado oil |
4 tablespoons honey |
1 teaspoon salt |
1 head cauliflower, cut into small bite sized pieces |
1 can chickpeas, drained and rinsed, 15 oz. |
8 taco-size tortillas, warmed |
Directions:
- Preheat the oven to 425° F. Line a sheet pan with parchment paper.
- Pour the chopped chipotle peppers, avocado oil, honey, and salt into a blender and pulse until smooth.
- Place the cauliflower and chickpeas in a mixing bowl. Pour on the chipotle sauce over top. Toss together until well coated. Pour the cauliflower and chickpeas on the sheet pan.
- Place the sheet pan in the oven and bake for 35 minutes, stirring halfway through.
- Remove the sheet pan from the oven. Spoon an even amount of the cauliflower and chickpeas in each tortilla. Enjoy!
