Peach Burrata Salad

Serves 6 |
Rich and flavorful, perfect for warm summer days.
Ingredients:
1/4 cup extra virgin olive oil |
1 1/2 teaspoons Dijon mustard |
2 1/2 teaspoons honey |
3 tablespoons balsamic vinegar |
1/4 teaspoon garlic powder |
1/2 teaspoon salt |
5 oz baby arugula |
3 peaches, sliced |
1/4 cup toasted pine nuts |
2 tomatoes, sliced |
3 tablespoons fresh basil leaves |
8 oz burrata cheese |
Directions:
- Combine the olive oil, Dijon mustard, honey, balsamic vinegar, garlic powder and salt in a mixing bowl. Whisk until ingredients are emulsified.
- Place the baby arugula in a large bowl. Pour in about 1/3 of the dressing. Toss together. Transfer to a later platter.
- Lay the sliced peaches, pine nuts, tomatoes, and basil on top of the arugula.
- Cut open the burrata and spoon over the salad.
- Drizzle the remaining dressing over the salad and enjoy.
