Baked Hawaiian Chicken

Sweet and savory in all the right ways.

Ingredients:

2 boneless skinless chicken breasts
1 tablespoon olive oil
Salt, to taste
Ground black pepper, to taste
1 red bell pepper, chopped
1 orange bell pepper, chopped
1 yellow onion, chopped
1/2 cup Hawaiian BBQ sauce
1 can pineapple chunks, drained, 20 oz.
2 teaspoons lime juice
Cooked rice, for serving

Directions:

  1. Preheat the oven to 350° F. Line a baking sheet with parchment paper.
  2. Slice the chicken into pieces and add to a mixing bowl. Drizzle olive oil and season with salt and pepper. Toss to coat.
  3. Add chopped bell peppers and onion to the bowl. Pour BBQ sauce over top and toss to combine.
  4. Transfer chicken mixture to the baking sheet and spread out evenly. Place in the oven and bake for 20 minutes.
  5. Remove the baking sheet from the oven and add the pineapple chunks. Place back into the oven and bake for an additional 20 minutes.
  6. Remove baking sheet from the oven. Squeeze the lime juice over top.
  7. Spoon BBQ chicken and pineapple onto a bed of rice and enjoy!
