Pear and Arugula Salad with Maple Vinaigrette Dressing

1 pear, thinly sliced
8 cups arugula leaves
1 tablespoon maple syrup
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
1/2 cup blue cheese crumbles
1/4 teaspoon kosher salt
1/8 teaspoon black pepper


  1. Whisk together mustard, maple syrup and vinegar; season with salt and pepper.
  2. Continuously whisking, add the olive oil in a slow, steady stream. Set aside.
  3. Arrange arugula on individual salad plates. Top with sliced pear and crumbled blue cheese.
  4. Drizzle with vinaigrette and serve.
