Easy Oatmeal Pecan Pie

Serves 8 | 
A fantastic holiday treat.

Ingredients:

2/3 cup old-fashioned oats
1/2 cup chopped pecans
1/2 cup butter
2/3 cup light corn syrup
1 teaspoon vanilla extract
2/3 cup sugar
2 eggs
1 pre-made pie crust

Directions:

  1. Preheat oven to 325° F. Place pie crust into a pie pan.
  2. Melt butter in a saucepan. Once melted, remove from heat and stir in corn syrup, sugar and oats. Mix well. Stir in vanilla extract and eggs. Mix well.
  3. Pour mixture into pie crust. Top with pecans. Place pie into oven and bake for 20-25 minutes. Remove from oven and let cool.
