Avocado Shrimp Salad

Serves 6 | 
Light, flavorful, and so easy to make.

Ingredients:

1 lb large shrimp, peeled, deveined, and cooked
2 avocados, diced
1/4 cup finely chopped red onion
1/2 cup halved cherry tomatoes
1/4 cup chopped fresh parsley
1/4 cup diced cucumber
2 tablespoons lime juice
1 tablespoon olive oil
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Chop the shrimp into small pieces. Set aside.
  2. Combine the diced avocados, red onion, tomatoes, parsley, and cucumber in a large mixing bowl. Set aside.
  3. In a separate smaller bowl, whisk together the lime juice, olive oil, salt and pepper.
  4. Add the shrimp to the avocado mixture. Pour the lime dressing over top and gently toss together until well combined.
  5. Serve immediately or chill in the refrigerator before serving.
