Crispy Hash Brown Sausage Bites

Perfect for breakfast or brunch.
Ingredients:
1 lb breakfast sausage |
3 cups frozen shredded hashbrowns |
1 cup shredded cheddar cheese |
1/4 cup diced green bell pepper |
1/4 cup diced onion |
2 large eggs |
1/4 cup flour |
1/2 teaspoon salt |
1/4 teaspoon paprika |
1/4 teaspoon dried thyme |
1/4 teaspoon garlic powder |
1/2 teaspoon black pepper |
Directions:
- Preheat your oven to 375° F. Lightly grease a mini muffin tin with cooking spray.
- Bring a skillet to medium heat. Add the breakfast sausage and cook until browned and fully cooked. Crumble the sausage whole cooking. Drain the fat and let sit for a few minutes.
- Add the sausage to a large bowl. Add the hashbrowns, shredded cheddar, green bell pepper, onion, eggs, flour, salt, paprika, thyme, garlic powder and black pepper. Stir to combine.
- Spoon the mixture into the muffin wells. Gently press down the tops.
- Place into the oven and bake for 20-25 minutes, until the hashbrown bites are golden brown and the edges are crispy.
- Remove from the oven and let cool for a few minutes before removing and serving.
