Turkish Eggs

A delectable way to begin the day.

Ingredients:

3 dill fronds
1/2 clove garlic
8 mint leaves
1 cup Greek yogurt
Salt, to taste
Ground black pepper, to taste
Water, for boiling
1 tablespoon vinegar
2 eggs
1/2 stick unsalted butter
1/2 teaspoon smoked paprika
1 teaspoon chili flakes

Directions:

  1. Finely chop the dill, garlic and mint. Transfer from the cutting board to a mixing bowl. Pour Greek yogurt into the bowl, season with salt and pepper, and stir together. Set aside.
  2. Pour water into a deep pot and bring to a boil. Pour vinegar into the pot and then crack one egg over the water. Cook for 3-minutes. Use a slotted spoon to gently remove the egg. Place on a plate and cook the second egg for 3-minutes, then transfer to the plate. Set aside.
  3. Add the butter to a saucepan and melted over medium heat. Once butter has melted, add paprika and stir until well combined.
  4. Separate the Greek yogurt mix in half and spoon each half onto a serving plate. Place a cooked egg in the center of each Greek yogurt. Drizzle the seasoned butter over the eggs and sprinkle the chili flakes over top.
