Wok Fried Coconut Shrimp

Serves 4 | 
Crispy, flavorful and great for many occasions.

Ingredients:

Peanut oil, for frying
2 cups shredded coconut
2 teaspoons curry powder
1/2 cup flour
Salt, to taste
Ground black pepper, to taste
2 eggs, beaten
1 lb shrimp

Directions:

  1. Pour peanut oil into the wok. Bring to medium heat.
  2. Partially cut shrimp down the center lengthwise to butterfly.
  3. Combine shredded coconut, curry powder and flour in a mixing bowl. Sprinkle with salt and pepper.
  4. Dip shrimp in beaten egg then roll the shrimp in the flour mixture. Repeat until all shrimp is coated.
  5. Place the shrimp in the wok and cook for about 3 minutes per side, until golden brown.
