Wok Fried Coconut Shrimp

Serves 4 |
Crispy, flavorful and great for many occasions.
Ingredients:
Peanut oil, for frying |
2 cups shredded coconut |
2 teaspoons curry powder |
1/2 cup flour |
Salt, to taste |
Ground black pepper, to taste |
2 eggs, beaten |
1 lb shrimp |
Directions:
- Pour peanut oil into the wok. Bring to medium heat.
- Partially cut shrimp down the center lengthwise to butterfly.
- Combine shredded coconut, curry powder and flour in a mixing bowl. Sprinkle with salt and pepper.
- Dip shrimp in beaten egg then roll the shrimp in the flour mixture. Repeat until all shrimp is coated.
- Place the shrimp in the wok and cook for about 3 minutes per side, until golden brown.
