Summer Roll Noodle Bowl

Serves 4 | 
Deliciously healthy and so easy to prepare.

Ingredients:

8 oz rice stir-fry noodles
1 cup mixed baby greens
3 cucumbers, cut into half moons
2 cups matchstick-cut carrots
1 cup loosely packed basil
1 cup loosely packed cilantro
1 cup loosely packed mint
1 shallot, thinly sliced
4 scallions, trimmed and thinly sliced
Avocado lime salad dressing, to taste
Sesame seeds, for garnish

Directions:

  1. Follow cooking directions on package of rice stir-fry noodles. Rinse with cold water.
  2. Toss together the rice stir-fry noodles, mixed baby greens, cucumbers, carrots, basil, cilantro, mint, shallots and scallions in a mixing bowl. Pour a generous amount of Avocado lime salad dressing into the bowl and toss until well coated.
  3. Transfer to four serving bowls, drizzle a little more avocado lime salad dressing over each bowl, top with sesame seeds and enjoy!
