Summer Roll Noodle Bowl





Serves 4 |
Deliciously healthy and so easy to prepare.
Ingredients:
8 oz rice stir-fry noodles |
1 cup mixed baby greens |
3 cucumbers, cut into half moons |
2 cups matchstick-cut carrots |
1 cup loosely packed basil |
1 cup loosely packed cilantro |
1 cup loosely packed mint |
1 shallot, thinly sliced |
4 scallions, trimmed and thinly sliced |
Avocado lime salad dressing, to taste |
Sesame seeds, for garnish |
Directions:
- Follow cooking directions on package of rice stir-fry noodles. Rinse with cold water.
- Toss together the rice stir-fry noodles, mixed baby greens, cucumbers, carrots, basil, cilantro, mint, shallots and scallions in a mixing bowl. Pour a generous amount of Avocado lime salad dressing into the bowl and toss until well coated.
- Transfer to four serving bowls, drizzle a little more avocado lime salad dressing over each bowl, top with sesame seeds and enjoy!
