Simple Coconut Rice

Serves 4 | 
Pairs well with just about everything.

Ingredients:

1 tablespoon olive oil
1 cup jasmine rice
1 cup coconut milk
1 cup vegetable broth
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Pour olive oil into a saucepan and bring to high heat. Once hot, add rice and saut�© for 1 minute.
  2. Pour coconut milk and vegetable broth into the saucepan, sprinkle salt and pepper over top and stir together. Bring to a boil then reduce heat to low, cover and let simmer for 10 minutes.
  3. Turn heat off and let sit with the lid on for 10 minutes.
  4. Remove lid and fluff rice up with a fork and transfer to serving plates to enjoy.
