Honey Sriracha Chicken Stir-fry





Serves 4 |
A perfect union of sweet and spicy.
Ingredients:
1 1/4 tablespoons avocado oil |
1/2 cup chopped cashews |
1/4 cup chicken broth |
1 lb chicken breasts, (boneless, skinless and chopped into cubes) |
1/4 cup honey |
1 teaspoon grated ginger root |
1 1/4 teaspoons salt |
1/4 cup honey |
1 tablespoon garlic, (finely chopped) |
2 teaspoons corn starch |
1 tablespoon Sriracha sauce |
3 tablespoons chopped cilantro |
2 tablespoons dry sherry |
6 cups chopped cabbage |
1 tablespoon white vinegar |
Directions:
- Combine honey, salt, sriracha sauce, sherry and white vinegar in a mixing bowl.
- Pour 1 tablespoon of avocado oil in a large skillet. Bring to high heat.
- Place chicken in skillet and cook 2-4 minutes per side. (Until browned)
- Add remaining avocado oil to skillet. Toss in ginger root and garlic. Stir fry for 30 seconds. Add cabbage to skillet and pour sauce over top. Cook for 2-3 minutes.
- In a separate mixing bowl combine cornstarch and chicken broth. Stir together.
- Pour over cabbage in skillet. Add chicken to skillet. Stir together and cook for 2-3 minutes.
- Remove skillet from heat. Stir in cashews and cilantro.
