Crisp & Fresh Mixed Greens Salad With Cucumber Vinaigrette





Serves 4 |
The light and refreshing vinaigrette balances the horseradish and mustard. This creates a new flavor experience that is unlike any other salad.
Ingredients:
| Vinaigrette |
| 2 tablespoons red-wine vinegar |
| 1/2 teaspoon salt |
| 2 tablespoons parsley, chopped |
| 1 teaspoon horseradish |
| 1 cucumber, peeled, seeded and chopped |
| 1 teaspoon Dijon mustard |
| 1/4 cup extra-virgin olive oil |
| 2 tablespoons chives, chopped |
| 1 teaspoon sugar |
| 1 tablespoon yogurt |
| Salad |
| 2 cups baby romaine |
| 2 hard-boiled eggs, peeled and chopped |
| 2 cups red leaf lettuce |
| 1/2 clove garlic, chopped |
| 4 scallions, sliced |
| 1/2 cup sliced radishes |
Directions:
- In a blender, combine oil, yogurt, sugar, salt, cucumber, vinegar, mustard, chives, horseradish and parsley. Puree until smooth consistency.
- Combine chopped garlic with lettuce in salad bowl. Coat lettuce with 1/4 cup vinaigrette, toss until evenly coated.
- Garnish salad with hard-boiled eggs, radishes and scallions. Serve and enjoy!
