Mashed Sweet Potatoes with Marshmallow Creme





Serves 6 |
End your meal on a sweet note.
Ingredients:
| 3 cups sweet potatoes, cooked and mashed |
| 2 tablespoons butter |
| 1/3 cup marshmallow crème |
| 1/4 cup milk |
| 1/2 teaspoons salt |
| 1 egg, well beaten |
| 1/2 cup miniature marshmallows |
Directions:
- Preheat oven to 400° F.
- Mix together sweet potatoes, butter, marshmallow crème, milk, and salt. Beat in egg.
- Spoon sweet potatoes into a lightly buttered baking dish. Place in oven and bake for 25 minutes. Remove sweet potatoes from oven.
- Preheat broiler.
- Top sweet potatoes with miniature marshmallows and then brown under broiler for about 4 minutes.
