Apple and Brie Stuffed Chicken





Serves 4 |
A gourmet-style meal made at home.
Ingredients:
| 4 boneless, skinless chicken breasts |
| 1 teaspoon chopped fresh thyme |
| 1 teaspoon chopped fresh rosemary |
| 2 Honeycrisp apples, thinly sliced |
| 4 oz brie cheese, sliced |
| 2 teaspoons olive oil |
| Salt, to taste |
| Black pepper, to taste |
| Honey, for drizzling |
Directions:
- Preheat the oven to 375°F.
- Horizontally cut about 3/4 of the way to butterfly each chicken breast.
- Lay open the chicken breasts and layer on the thyme, rosemary, apple slices, and brie on one side of the chicken. Fold over the other side and secure with toothpicks. Season with salt and pepper. Set aside.
- Pour the olive oil into an ovenproof skillet. Bring to medium-high heat. Once hot, place the chicken into the skillet and sear for 2-3 minutes per side, until golden brown.
- Transfer the skillet to the oven. Bake for 20-22 minutes.
- Remove the skillet from the oven and transfer the chicken to a cutting board. Allow the chicken to rest 5 minutes. Place the chicken on serving plates. Remove the toothpicks and drizzle with honey. Enjoy!
