Pesto Pasta with White Beans and Broccoli

Serves 4 | 
A protein-packed 30-minute meal.

Ingredients:

1 lb mini shell pasta
2 tablespoons olive oil
4 cloves garlic, minced
4 cups chopped broccoli
Sea salt, to taste
Black pepper, to taste
1 can white beans, drained and rinsed, 15 oz
1 cup prepared pesto sauce

Directions:

  1. Cook the pasta according to the package directions. Set aside.
  2. Bring a large pan to medium heat. Add 1 tablespoon of olive oil to the pan, then add the minced garlic. Cook for about a minute, until the garlic is fragrant. Then add the broccoli and a big pinch of salt and black pepper. Cook and stir the broccoli for 5-7 minutes, until tender.
  3. Pour in the white beans and cook and stir for 2 minutes. Add in the cooked pasta and the pesto sauce. Stir together until well mixed. Season with salt and pepper to taste. Cook until the pasta is warmed through.
  4. Spoon onto serving plates. Enjoy!
