Spinach Artichoke Chicken Burgers





Serves 6 |
Packed with veggies and big flavor.
Ingredients:
1 tablespoon ghee |
1 yellow onion, minced |
5 cloves garlic, minced |
3 oz fresh spinach, chopped |
1/2 cup artichoke hearts, chopped |
Sea salt, to taste |
Ground black pepper, to taste |
1 large egg |
2/3 cup avocado oil, more for frying |
1/2 tablespoon brown mustard |
1 1/2 tablespoons lemon juice |
1 lb ground chicken |
1 tablespoon lemon zest |
1 tablespoon nutritional yeast |
1/2 tablespoon crushed red pepper |
6 hamburger buns, toasted |
Directions:
- Mince 3 cloves of garlic. Set aside for a minute.
- Bring a medium skillet to medium heat. Add the ghee and allow to melt. Add the onion and saute until translucent. Then add the garlic and cook 30 seconds. Add the spinach and stir it begins to wilt. Then stir in the artichoke hearts and cook for 1 minute. Sprinkle with a pinch of salt and pepper. Remove the skillet from the heat. Set aside.
- Mince the remaining 2 cloves of garlic. Add the garlic to a food processor. Then add the egg, avocado oil, brown mustard, and lemon juice. Pulse until smooth. Place in the refrigerator.
- In a mixing bowl, combine the ground chicken, lemon zest, nutritional yeast, and red pepper. Season salt and pepper. Add the spinach mixture to the ground chicken mixture. Mix until well combined. Form into 6 patties.
- Bring a large pan to medium heat. Drizzle in a little avocado oil. Once the oil is hot, add the chicken patties and cook for 3-4 minutes per side.
- Place the patties on the toasted buns. Spread the garlic aioli over top. Enjoy!
