Maple Walnut Twice Baked Sweet Potatoes

Enjoy this Fall twist on an all-time classic.
Ingredients:
4 sweet potatoes |
1/2 cup Greek yogurt |
4 tablespoons brown sugar |
1 tablespoon maple syrup |
1/2 tablespoon pumpkin pie spice |
1/8 teaspoon salt |
2/3 cup chopped walnuts |
2 tablespoon light brown sugar |
2 tablespoons butter |
Directions:
- Preheat the oven to 400° F.
- Pierce the sweet potatoes with a fork. Arrange them on a large baking pan. Place in the oven to bake for 20-45 minutes, until soft.
- Cut each potato in half lengthwise and scoop out the sweet potato, leaving the skin intact.
- Place the sweet potato skins on the baking pan.
- Mash the baked sweet potato in a bowl until smooth. Then add the Greek yogurt, brown sugar, maple syrup, pumpkin pie spice, and salt. Spoon the filling into the sweet potato skins.
- Mix the walnuts, light brown sugar, and butter. Sprinkle over the sweet potatoes.
- Place the sweet potatoes back in the oven and bake for 12-15 minutes.
- Remove from oven, serve while warm.
