Chicken Bruschetta Casserole

Serves 4 |
Flavorful, versatile, and perfect for leftovers.
Ingredients:
4 everything bagels |
1/2 cup 18% cream |
1/2 cup garlic and herb cream cheese |
2 chicken breasts, cooked, shredded |
4 Roma tomatoes, diced, seeded |
1/2 red onion, diced |
2 tablespoons basil pesto |
1 teaspoon grated parmesan cheese |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1/2 cup grated mozzarella cheese |
Directions:
- Preheat oven to 400° F. Grease a 9x13 baking dish with baking spray.
- Cut the bagels into small pieces. Pour them into the baking dish and spread out evenly.
- Place the 18% cream and garlic and herb cream cheese in a saucepan. Bring to medium-low and whisk until fully smooth.
- Add chicken to the saucepan and stir to coat. Remove the pan from the heat.
- Stir together the diced tomatoes, red onion, basil pesto, parmesan, salt and pepper in a mixing bowl.
- Pour the chicken into the baking dish and spread the cream cheese mixture over the chicken. Sprinkle the grated mozzarella over top.
- Transfer the baking dish to the oven. Bake for 30 minutes.
- Remove from the oven and let to cool for 5 minutes before serving. Enjoy!
