Awesome Blueberry Cobbler





Serves 6 |
Move over blueberry pie!
Ingredients:

4 pints fresh blueberries+ Add to Shopping List |
2 tablespoons lemon juice+ Add to Shopping List |
1/2 cup granulated sugar, more for dusting+ Add to Shopping List |
1 teaspoon ground cinnamon+ Add to Shopping List |
2 tablespoons cornstarch+ Add to Shopping List |
1 cup flour+ Add to Shopping List |
3/4 cup milk+ Add to Shopping List |
2 teaspoons baking powder+ Add to Shopping List |
1 cup sugar+ Add to Shopping List |
1/4 teaspoon salt+ Add to Shopping List |
6 tablespoons butter, melted+ Add to Shopping List |
Directions:
- Preheat oven to 400° F. Grease a 10-inch tart pan with baking spray.
- In a mixing bowl, combine the blueberries, lemon juice, cinnamon, sugar and cornstarch. Stir until just combined.
- Pour the blueberry mixture into the tart pan.
- Combine the flour, milk, baking powder, sugar and salt in a mixing bowl. Stir until just until combined.
- Spoon dollops of the dough evenly over the top of the blueberry mixture.
- Drizzle the melted butter over top and dust with sugar.
- Set the tart pan on a cookie sheet and place in the oven to bake for 25-35 minutes, until the top is golden brown.
- Remove from the oven and let cool for 15 minutes before serving.
