Maple Pecan Roasted Sweet Potatoes





Serves 8 |
Sweeten up your holiday side dishes!
Ingredients:
| 2 lb sweet potatoes, sliced |
| 2 tablespoons melted butter |
| Salt, to taste |
| Ground black pepper, to taste |
| 1 tablespoons brown sugar |
| 1/4 cup maple syrup |
| 1/2 cup chopped pecans |
Directions:
- Preheat oven to 450° F. Line a rimmed baking sheet with aluminum foil.
- Place sweet potatoes into a mixing bowl and pour melted butter over top. Season with salt and pepper and toss until well coated. Spread sweet potatoes in an even layer on the baking sheet.
- Bake for 20 minutes, until the bottoms begin to brown.
- Combine brown sugar, maple syrup and chopped pecans in a small bowl. Stir together until well combined.
- Remove the baking sheet from the oven and flip the sweet potatoes. Pour the brown sugar- maple syrup mixture evenly over the sweet potatoes.
- Place the baking sheet back into the oven and bake for an additional 5 minutes.
