Tomato Mozzarella Balsamic Chicken





Serves 4 |
A one skillet dish that marks every box.
Ingredients:
2 tablespoons olive oil |
1/3 cup balsamic vinegar |
1 tablespoon Dijon mustard |
1 teaspoon Italian seasoning |
2 cloves garlic, minced |
2 tablespoons honey |
Kosher salt, to taste |
Ground black pepper, to taste |
2 tablespoons finely chopped basil |
8 oz grape tomatoes, halved |
8 oz mozzarella pearls |
2 tablespoons avocado oil |
4 boneless skinless chicken breasts |
Directions:
- Whisk together olive oil, balsamic vinegar, Dijon mustard, Italian seasoning, garlic and honey in a mixing bowl. Season with salt and pepper. Set aside.
- In a separate bowl, toss together the basil, grape tomatoes and mozzarella pearls. Season with salt and pepper. Set aside.
- Preheat oven to 400° F.
- Pour avocado oil into a large skillet and bring to medium-high heat. Once hot, add the chicken breasts and season with salt and pepper. Cook for 2 minutes per side, until a light golden brown.
- Remove the pan from the heat and add in the balsamic vinegar mixture. Stir together and then add the tomato and basil mozzarella mixture over the top of the chicken.
- Place the skillet into the oven and bake uncovered for about 22 minutes, until chicken is fully cooked.
- Remove from oven and let rest for 5 minutes before serving.
