Cheesy Sausage Potato Pie

Serves 8 |
Easy to make and even easier to enjoy.
Ingredients:
8 red skinned potatoes |
3 cloves garlic |
2 tablespoons butter |
1 teaspoon sea salt, more to taste |
1 teaspoon ground black pepper, more to taste |
2 cups shredded cheddar cheese |
2 lb sausage, your preference |
2 lb frozen corn |
2 tablespoons melted butter |
1 tablespoon dried dill weed |
1 tablespoon parsley |
Directions:
- Preheat oven to 350 degrees F.
- Dice potatoes and garlic. Place in a pot and boil until tender. Drain water. Add butter, salt, pepper, 1 cup cheddar cheese and milk. Mash or whip until very creamy. Set aside.
- Brown sausage and drain. Set aside.
- Spray casserole dish with non-stick spray. Place corn in casserole dish, pour in melted butter, and dill. Season with salt and pepper. Stir well to blend ingredients and press flat into casserole dish. Spread cooked sausage over top. Next spread garlic mashed potatoes and remaining cheese over sausage layer. Finish with a sprinkle of parsley.
- Cover and place in oven and bake for 30-40 minutes. Uncover during last 15 minutes.
