Cinnamon Coffee Crinkle Cookies





Serves 12 |
Bold flavors of coffee and cinnamon.
Ingredients:
1 1/2 cups flour |
1/4 teaspoon salt |
1 teaspoon baking powder |
1 1/2 teaspoons ground cinnamon |
2 tablespoons instant coffee |
1 teaspoon vanilla extract |
1/2 cup unsalted butter, melted |
3/4 cup brown sugar |
1 large egg |
1/4 cup sugar, for rolling |
1/4 cup powdered sugar, for rolling |
Directions:
- In a medium mixing bowl, stir together the flour, salt, baking powder, and ground cinnamon. Set aside.
- Stir together the instant coffee and vanilla extract in a separate bowl. Set aside.
- In a large mixing bowl, beat together the melted butter with the brown sugar until smooth. Then mix in the egg, followed by the coffee mixture . Stir until fully combined.
- Gradually pour in the flour mixture, mix until just combined. The dough will be soft and slightly sticky.
- Cover the dough and refrigerate for 30 minutes.
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Divide the dough into 12 segments and roll them into balls. Roll the dough balls in the sugar first, then in the powdered sugar.
- Arrange them on the baking sheet and gently press down slightly to flatten. Place the baking sheet in the oven to bake for 10-12 minutes.
- Remove from the oven and let the cookies rest on the baking sheet for 5 minutes. Then transfer to a wire rack to cool completely.
