Watermelon Mojito





Serves 2 |
The perfect summer poolside cocktail.
Ingredients:
2 cups cubed fresh watermelon |
1/4 cup packed fresh mint leaves |
2 tablespoons lime juice |
2 tablespoons simple syrup |
1 cup sparkling water |
Mint sprigs, for garnish |
Watermelon slices, for garnish |
Directions:
- Place the watermelon cubes in a blender, pulse until smooth. Set aside.
- Add the mint leaves and lime juice to a tall glass or cocktail shaker. Use a muddler or the back of a spoon to gently press the mint leaves to release their oils.
- Pour in the watermelon juice, then add simple syrup. Stir to combine.
- Fill two glasses with ice cubes. Pour in the watermelon mixture and top with sparkling water. Stir gently to mix. Garnish with mint sprigs and watermelon slices. Enjoy!
