Maple Bacon Sweet Potato Hash

Serves 6 |
Sweet and savory, and ready in a snap.
Ingredients:
1 lb bacon, diced |
3 sweet potatoes, cubed |
1/2 teaspoon ground cinnamon |
2 tablespoons maple syrup |
Directions:
- Place the bacon into a skillet and bring to medium heat. Cook until just crisp. Transfer to a paper towel lined plate.
- Pour out the bacon grease. Return the skillet to the stove top. Bring to medium heat.
- Add the diced sweet potatoes and sprinkle the cinnamon over top. Cook for 10-15 minutes, stirring frequently, until the sweet potatoes are tender.
- Add the bacon back into the skillet and stir together with the sweet potatoes. Drizzle the maple syrup over the top and stir.
- Spoon the bacon sweet potato hash on to serving plates. Enjoy!
