Chex Chocolate Butterscotch Clusters





Serves 24 |
Simple and sweet, rich and irresistible.
Ingredients:
| 6 cups Rice Chex cereal |
| 1 cup creamy peanut butter |
| 1 cup light corn syrup |
| 1/2 cup sugar |
| 1 cup butterscotch chips |
| 1 cup milk chocolate chips |
Directions:
- Add the peanut butter, corn syrup, and sugar in a saucepan. Stir together and bring to low heat. Cook and stir until just warm.
- Pour the Rice Chex cereal into a large mixing bowl. Pour the peanut butter mixture over cereal and mix to coat.
- Lay a sheet of parchment paper on the countertop. Use a cookie scoop to separate into 24 clusters. Drop the clusters onto the parchment paper.
- Allow the clusters to cool completely.
- In a small saucepan, melt the butterscotch and chocolate chips over low heat, stirring frequently until smooth.
- Drizzle the mixture over the clusters. Let sit until the drizzle becomes firm.
