Seared Balsamic Veggie Wrap

Healthy, easy to make, and super flavorful.

Ingredients:

2 tablespoons olive oil
2 teaspoons balsamic vinegar
1 clove garlic, minced
1 teaspoon dried rosemary
Salt, to taste
Black pepper, to taste
1 cup mushrooms, chopped
1 red bell pepper, chopped
1 red onion, chopped
1 zucchini, chopped
4 whole wheat tortillas
1/2 cup hummus
1/2 cup goat cheese
2 cups chopped Romaine lettuce

Directions:

  1. Whisk together the olive oil, balsamic vinegar, minced garlic, rosemary, salt, and pepper in a small bowl.
  2. Place the mushrooms, red bell pepper, red onion, and zucchini in a large mixing bowl. Pour the balsamic marinade over top and toss until coated. Place the bowl into the refrigerator let chill for 1 hour.
  3. Bring a large pan to medium-high heat. Once hot, place the vegetables into the pan. Cover and cook for 2 minutes. Remove the lid and stir. Cook for an additional minute uncovered.
  4. Spread the hummus along the center of each tortilla, then sprinkle with goat cheese. Add an equal amount of chopped Romaine to each tortilla followed by the seared vegetables.
  5. Fold the bottom and top of the tortillas inward, then roll up. Slice the warp in half. Enjoy!
