Seared Balsamic Veggie Wrap

Serves 4 |
Healthy, easy to make, and super flavorful.
Ingredients:
2 tablespoons olive oil |
2 teaspoons balsamic vinegar |
1 clove garlic, minced |
1 teaspoon dried rosemary |
Salt, to taste |
Black pepper, to taste |
1 cup mushrooms, chopped |
1 red bell pepper, chopped |
1 red onion, chopped |
1 zucchini, chopped |
4 whole wheat tortillas |
1/2 cup hummus |
1/2 cup goat cheese |
2 cups chopped Romaine lettuce |
Directions:
- Whisk together the olive oil, balsamic vinegar, minced garlic, rosemary, salt, and pepper in a small bowl.
- Place the mushrooms, red bell pepper, red onion, and zucchini in a large mixing bowl. Pour the balsamic marinade over top and toss until coated. Place the bowl into the refrigerator let chill for 1 hour.
- Bring a large pan to medium-high heat. Once hot, place the vegetables into the pan. Cover and cook for 2 minutes. Remove the lid and stir. Cook for an additional minute uncovered.
- Spread the hummus along the center of each tortilla, then sprinkle with goat cheese. Add an equal amount of chopped Romaine to each tortilla followed by the seared vegetables.
- Fold the bottom and top of the tortillas inward, then roll up. Slice the warp in half. Enjoy!
