Saucy Pepperoncini Chicken Skillet





Serves 6 |
Savory, creamy, cheesy and a little sweet.
Ingredients:
| 2 tablespoons butter |
| 2 lb chicken breasts, cut into thin strips |
| 1 teaspoon sea salt |
| 1 teaspoon ground pepper |
| 2 tablespoons garlic, diced |
| 1 white onion, diced |
| 4 roasted red pepper, drained and sliced |
| 1/2 cup chicken stock |
| 1 cup heavy cream |
| 1/2 cup shredded parmesan cheese |
| 1/2 cup sliced pepperoncini peppers |
| 1 tablespoon Italian seasoning |
Directions:
- Place the butter in a large pan and bring to medium-high heat to melt.
- Season the chicken breasts with salt and pepper. Add to the pan and brown on all sides, turning often.
- Remove the chicken from the pan. Set aside.
- Add the garlic and white onion to the same pan. Cook for about 5 minutes, stirring sporadically.
- Add the roasted red peppers and chicken stock to the pan. Let sit and cook for 5 minutes.
- Turn off the heat and whisk in the heavy cream and parmesan cheese, until fully incorporated.
- Bring heat back to medium-high. Stir in the pepperoncini and Italian seasoning. Then add the chicken to pan. Coat the chicken and let the sauce reduce to half.
- Remove pan from heat and transfer the chicken to serving plates. Spoon and remaining sauce over the chicken and enjoy!
