Saucy Pepperoncini Chicken Skillet

Savory, creamy, cheesy and a little sweet.


2 tablespoons butter
2 lb chicken breasts, cut into thin strips
1 teaspoon sea salt
1 teaspoon ground pepper
2 tablespoons garlic, diced
1 white onion, diced
4 roasted red pepper, drained and sliced
1/2 cup chicken stock
1 cup heavy cream
1/2 cup shredded parmesan cheese
1/2 cup sliced pepperoncini peppers
1 tablespoon Italian seasoning


  1. Place the butter in a large pan and bring to medium-high heat to melt.
  2. Season the chicken breasts with salt and pepper. Add to the pan and brown on all sides, turning often.
  3. Remove the chicken from the pan. Set aside.
  4. Add the garlic and white onion to the same pan. Cook for about 5 minutes, stirring sporadically.
  5. Add the roasted red peppers and chicken stock to the pan. Let sit and cook for 5 minutes.
  6. Turn off the heat and whisk in the heavy cream and parmesan cheese, until fully incorporated.
  7. Bring heat back to medium-high. Stir in the pepperoncini and Italian seasoning. Then add the chicken to pan. Coat the chicken and let the sauce reduce to half.
  8. Remove pan from heat and transfer the chicken to serving plates. Spoon and remaining sauce over the chicken and enjoy!
