Apple Cinnamon Breakfast Cookies

Healthy, delicious, and great for busy mornings.

Ingredients:

1/4 cup oat flour
1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/2 teaspoon salt
1/3 cup brown sugar
1 teaspoon vanilla
1/2 cup apple butter
1 egg
3/4 cup raisins
1 red apple, grated with peel
1 1/2 cups old-fashioned oatmeal

Directions:

  1. Preheat oven to 375° F. Spray a baking sheet with baking spray.
  2. Add the oat flour, whole wheat flour, baking powder, cinnamon, cardamom, and salt to a mixing bowl. Stir until well combined.
  3. Add the brown sugar, vanilla extract, apple butter, and egg to the mixture. Stir until well combined.
  4. Add the raisins, red apple, and oatmeal to the mixture. Stir until well combined.
  5. Scoop out dough and roll into 12 balls. Arrange dough balls on the baking sheet and press down gently to slightly flatten.
  6. Place the baking sheet into the oven and bake for 15 minutes.
  7. Remove from the oven and let cool completely on a rack.
