Apple Cinnamon Breakfast Cookies





Serves 12 |
Healthy, delicious, and great for busy mornings.
Ingredients:
1/4 cup oat flour |
1/2 cup whole wheat flour |
1/2 teaspoon baking powder |
1/2 teaspoon cinnamon |
1/4 teaspoon cardamom |
1/2 teaspoon salt |
1/3 cup brown sugar |
1 teaspoon vanilla |
1/2 cup apple butter |
1 egg |
3/4 cup raisins |
1 red apple, grated with peel |
1 1/2 cups old-fashioned oatmeal |
Directions:
- Preheat oven to 375° F. Spray a baking sheet with baking spray.
- Add the oat flour, whole wheat flour, baking powder, cinnamon, cardamom, and salt to a mixing bowl. Stir until well combined.
- Add the brown sugar, vanilla extract, apple butter, and egg to the mixture. Stir until well combined.
- Add the raisins, red apple, and oatmeal to the mixture. Stir until well combined.
- Scoop out dough and roll into 12 balls. Arrange dough balls on the baking sheet and press down gently to slightly flatten.
- Place the baking sheet into the oven and bake for 15 minutes.
- Remove from the oven and let cool completely on a rack.
