Chicken Drumsticks with Paprika and Peppers

Spicy, savory, hot and delicious!

Ingredients:

6 chicken drumsticks
2 tablespoons olive oil
2 tablespoons hot paprika
1 teaspoon red pepper flakes, more to taste
Salt, to taste
Ground black pepper, to taste
2 bell peppers, seeded and sliced into strips
4 jalapeno peppers, sliced into strips
2 yellow onions, sliced
6 cloves garlic, minced
1 1/2 cups dry white wine

Directions:

  1. Heat oven to 400° F.
  2. Place the chicken drumsticks in a mixing bowl. Pour 1 tablespoon olive oil, 1 tablespoon paprika, chili flakes, salt and pepper over the drumsticks and toss to coat.
  3. Bring a large oven-proof skillet to medium-high heat. Once hot, place the chicken drumsticks in the skillet and cook for 5 minutes, turning frequently to brown each side. Remove the chicken from the skillet and set aside.
  4. Pour the remaining olive oil into the skillet and bring to medium-high heat. Add the bell pepper slices, jalapeno pepper slices, and yellow onions. Cook for 5 minutes, turning often.
  5. Add the garlic and cook for 1 minute, until fragrant. Remove the skillet from the heat.
  6. Add the chicken back to the skillet.
  7. Pour the wine into the pan. Season with remaining paprika. Sprinkle additional red pepper flakes, salt, and pepper over the chicken, if desired.
  8. Transfer the skillet to the oven and cook uncovered for 40 minutes, turning the chicken a few times throughout.
  9. Remove from the oven and transfer to serving plates. Enjoy!
