Grilled Chipotle Lime Chicken

Serves 4 | 
A little sweet and tangy with bold chipotle flavor.

Ingredients:

4 boneless skinless chicken breasts
1/2 cup olive oil, more for marinating chicken
Southwest seasoning, to taste
4 tablespoons fresh lime juice
2 cloves garlic, minced
2 chipotle chilies in adobo sauce, minced, 1 tablespoon adobo sauce reserved
2 tablespoons honey

Directions:

  1. Drizzle a small amount of olive oil over the chicken breasts and generously sprinkle the Southwest seasoning on both sides.
  2. In a small bowl, whisk together 1/2 cup olive oil, lime juice, minced garlic, and chipotles in adobo with the reserved sauce. Pour half of the marinade into sealable container and place the seasoned chicken breasts inside. Seal the lid shut and toss to coat. Place in the refrigerator to marinate 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Whisk the honey into the remaining marinade. Set aside. Remove the chicken from the marinade and place onto grill. Cook for about 5 minutes then flip over and cook for an additional 5 minutes. Baste both sides of the chicken with the honey-marinade mixture and cook for 2 more minutes per side, until browned.
  5. Transfer the chicken to serving plates and pour any remaining honey sauce over top and enjoy!
