Brown Butter Spicy Miso Pasta





Serves 2 |
Big flavors with minimum effort.
Ingredients:
1 box shells pasta, 16 oz. |
2 tablespoons unsalted butter |
1/4 cup olive oil |
4 cloves garlic, minced |
1/2 tablespoon white miso paste |
1 teaspoon crushed chili flakes |
1/2 teaspoon cayenne pepper |
1/2 teaspoon sweet paprika |
1/2 teaspoon smoked paprika |
1/2 teaspoon cumin |
20 sage leaves |
Sea salt, to taste |
Ground black pepper, to taste |
Grated parmesan, for serving |
1 cup breadcrumbs |
Directions:
- Cook the pasta according to package directions until al dente. Drain, reserving 1/2 cup of the pasta water. Return pasta to the pot and set aside.
- Bring a large skillet to medium heat, then add butter. Turn heat to low and cook for 2-3 minutes, until butter foams and starts to brown. Add olive oil and garlic, cook for 2 minutes until garlic has softened. Stir in miso paste, then add the chili flakes, cayenne pepper, sweet paprika, smoked paprika, cumin, and sage leaves. Stir together well.
- Pour the brown butter spicy miso sauce over the pasta and toss together. Add the reserved pasta water and stir together. Season with sea salt and pepper.
- Transfer pasta to serving plates. Sprinkle parmesan and breadcrumbs over top and enjoy!
