Delectable Tortellini Primavera





Serves 6 |
Rich with flavors and wholesome ingredients.
Ingredients:
1 package refrigerated cheese tortellini, 9 oz. |
1 tablespoons extra-virgin olive oil |
2 cloves garlic, pressed |
2 zucchini, chopped |
2 yellow squash, chopped |
Sea salt, to taste |
Ground black pepper, to taste |
1 bunch green onions, chopped |
1 pint grape tomatoes, halved |
1/2 cup creamy Caesar salad dressing |
1/2 cup shredded Parmesan cheese |
Directions:
- Cook tortellini according to package directions. Drain water and set aside.
- In a large skillet, pour in olive oil, bring to medium heat and saute garlic, zucchini and yellow squash for 5 minutes. Season with sea salt and pepper.
- Transfer tortellini to a mixing bowl. Pour the squash mixture into the bowl. Add green onions and grape tomato halves. Season with sea salt and pepper. Toss together until well combined.
- Drizzle the Caesar salad dressing over top and toss to coat.
- Transfer tortellini primavera to serving plates. Sprinkle with parmesan cheese and enjoy!
