Garlic Lemon Veggie Linguini





Serves 8 |
Pasta dinner ready in under 30 minutes.
Ingredients:
| 1 box linguini, 16 oz. |
| 2 tablespoons olive oil |
| 2 cloves garlic, minced |
| 1 pint grape tomatoes |
| 1 bag spinach, 5 oz. |
| 2 tablespoons fresh lemon juice |
| 1/4 cup grated parmesan, more for garnish |
| Salt, to taste |
| Ground black pepper, to taste |
Directions:
- Fill a pot with water and bring to a boil. Once boiling, place linguini into the water and cook until al dente. Drain water and set aside.
- Pour olive oil into a large skillet and bring to medium-low heat. Add garlic and cook for 30 seconds, until aromatic. Add grape tomatoes, stir around to coat and cook for 3 minutes. Add the spinach to the skillet, stir and cook for 3 minutes. Add the cooked linguini to the skillet. Drizzle lemon juice over top and sprinkle on grated parmesan. Toss to coat.
- Transfer to serving plates. Season with salt and pepper and enjoy!
