Banana Breakfast Bars

Serves 10 | 
A cross between a banana blondie and a granola bar.

Ingredients:

2 ripe bananas
1/4 cup brown sugar
1/4 cup coconut oil
1/2 teaspoon salt
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 cup old fashioned oats
1/2 cup wheat flour

Directions:

  1. Preheat oven to 350° F. Grease a large square baking pan with cooking spray.
  2. Place bananas into a mixing bowl and mash with a fork.
  3. Add brown sugar and coconut oil to the mashed bananas and mix together well.
  4. Add the salt, egg and vanilla extract to the mash and mix together well.
  5. Add the baking soda to the mash and mix well.
  6. Add the oats and wheat flour to the mash and mix well.
  7. Transfer the mash to the baking pan. Use a spoon to spread out and make smooth.
  8. Place the baking pan in the oven and bake for 18-22 minutes, until edges are golden brown.
  9. Remove from the oven, let cool completely and cut into 10 bars.
