Cheesy Southwest Turkey Bake

Comfort food with a delicious twist.

Ingredients:

3 lb. turkey breast, cooked and shredded
1 jar red enchilada sauce, 16 oz.
1 tablespoon olive oil
1 cup diced yellow onion
2 cans Mexican-style tomatoes, drained, 10-oz. each
2 cans black beans, drained, 14-oz.
1 dozen corn tortillas
1 pint sour cream
6 cups shredded queso quesadilla cheese

Directions:

  1. Preheat oven to 350° F.
  2. Combine the shredded turkey with 3/4 of the enchilada sauce in a mixing bowl. Set the reserved enchilada sauce off to the side.
  3. Pour olive oil into a saute pan and bring to medium heat. Add diced yellow onion and cook for about 3 minutes, until soft. Add the tomatoes and black beans to the onions and stir together.
  4. Grease a 9x13 baking dish for cooking spray. Place 2 tortillas in the bottom of the dish. And cut a third tortilla in half and place in the center along the sides of the baking dish. Spread 1/2 cup sour cream over the tortillas, then layer 1/3 of the turkey mixture and tomato mixture and a 1/4 of the cheese. Continue this process of layering two more times. Place the final two whole tortillas on top, cut the last tortilla in half and place in the center along the sides. Spread the reserved enchilada sauce over tortillas and sprinkle the remaining cheese over top.
  5. Cover the baking dish with aluminum foil and place in the oven to bake for 20 minutes. Remove the aluminum foil and bake for an additional 20 minutes.
  6. Remove from the oven, cut into eight servings and enjoy!
