Classic Cobb Salad

Serves 4 |
This salad is practically a meal!
Ingredients:
2/3 cup extra-virgin olive oil |
1/3 cup red wine vinegar |
1 tablespoon Dijon mustard |
1 head romaine lettuce, chopped |
2 chicken breasts, cooked and diced |
1 avocado, thinly sliced |
8 slices bacon, cooked and crumbled |
4 hard-boiled eggs, peeled and quartered |
1 1/2 cups cherry tomatoes, halved |
1 container blue cheese crumbles, 4 oz. |
2 teaspoons finely chopped chives |
Directions:
- Pour olive oil, red wine vinegar and Dijon mustard into a jar with a lid. Seal with the lid and shake dressing together.
- Place lettuce in a salad bowl. Arrange chicken, avocado, bacon, hard-boiled eggs and cherry tomatoes in rows on top of the lettuce. Sprinkle blue cheese over top. Pour dressing over entire salad. Garnish with chives and enjoy!
