Pineapple Salsa Salmon

Serves 4 | 
The trifecta of savory, spicy and sweet.

Ingredients:

4 salmon fillets
3/4 cup Hawaiian marinade
1 cup chopped fresh pineapple
1/4 cup finely chopped red bell pepper
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped red onion
1 tablespoon finely chopped jalapeno pepper

Directions:

  1. Place salmon in large glass dish. Pour 1/2 cup of the marinade into the glass dish, turn to coat well. Cover and refrigerate for 15 minutes.
  2. Preheat grill to medium-high heat.
  3. Mix the remaining marinade with pineapple, bell pepper, cilantro, onion and jalapeno in a mixing bowl.
  4. Remove salmon from marinade. Discard any remaining marinade.
  5. Grill salmon for about 6 minutes per side. Salmon should easily flake with a fork.
  6. Serve salmon with pineapple salsa.
