Pineapple Salsa Salmon

Serves 4 |
The trifecta of savory, spicy and sweet.
Ingredients:
4 salmon fillets |
3/4 cup Hawaiian marinade |
1 cup chopped fresh pineapple |
1/4 cup finely chopped red bell pepper |
2 tablespoons finely chopped fresh cilantro |
2 tablespoons finely chopped red onion |
1 tablespoon finely chopped jalapeno pepper |
Directions:
- Place salmon in large glass dish. Pour 1/2 cup of the marinade into the glass dish, turn to coat well. Cover and refrigerate for 15 minutes.
- Preheat grill to medium-high heat.
- Mix the remaining marinade with pineapple, bell pepper, cilantro, onion and jalapeno in a mixing bowl.
- Remove salmon from marinade. Discard any remaining marinade.
- Grill salmon for about 6 minutes per side. Salmon should easily flake with a fork.
- Serve salmon with pineapple salsa.
