Savory Pierogi Casserole

The classic dish reimagined.
Ingredients:
3 tablespoons butter |
3 tablespoons flour |
3 cups skim milk |
1/8 teaspoon cayenne pepper |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
1/4 cup breadcrumbs |
1 strip bacon, cooked and crumbled |
1/4 cup shredded Swiss cheese |
1 package frozen cheese and potato pierogis, 12 oz. |
1/8 teaspoon paprika |
Directions:
- Preheat oven to 350° F.
- In a medium saucepan, melt butter over medium heat. Once melted, add flour and cook for 2 minutes, stirring constantly. Add milk and cook for 5 minutes, stirring until thickened. Stir in cayenne pepper, salt, and pepper. Remove from heat.
- In a small bowl, combine breadcrumbs, bacon, and Swiss cheese. Mix together well. Set aside.
- Arrange pierogis in bottom of a shallow casserole dish. Pour milk mixture over pierogis. Sprinkle bread crumb mixture on top. Sprinkle paprika over top of breadcrumbs.
- Bake until topping is golden and casserole bubbles, about 20 minutes.
