Black Bean and Sausage Soup

You'll love every spoonful of this yummy soup.
Ingredients:
1 tablespoon olive oil |
2 sausage links, cut into pieces |
1 yellow onion, chopped |
1 red bell pepper, chopped |
1/4 cup chopped green onions |
3 cloves garlic, minced |
4 cups chicken broth |
2 cans black beans, drained and rinsed, 15 oz. each |
1/2 teaspoon ground cumin |
2 tablespoons chopped parsley |
3 tablespoons lime juice |
1/8 teaspoon hot red pepper sauce |
Directions:
- In a large saucepan, heat oil over medium-high heat. Add sausage. Cook for about 5 minutes, until browned. Transfer the sausage on a paper towel-lined plate.
- Wipe grease from the saucepan. Add onion, bell pepper, and green onions to saucepan. Cook for 6-7 minutes. Add garlic and cook for an additional minute.
- Add chicken broth and cumin to the pan. Reduce heat to a medium. Add beans and sausage to the pan. Cook for about 15 minutes, until thickened. Stir in parsley, lime juice, and red pepper sauce.
- Ladle soup into serving bowls and enjoy!
