Black Bean and Sausage Soup

You'll love every spoonful of this yummy soup.

Ingredients:

1 tablespoon olive oil
2 sausage links, cut into pieces
1 yellow onion, chopped
1 red bell pepper, chopped
1/4 cup chopped green onions
3 cloves garlic, minced
4 cups chicken broth
2 cans black beans, drained and rinsed, 15 oz. each
1/2 teaspoon ground cumin
2 tablespoons chopped parsley
3 tablespoons lime juice
1/8 teaspoon hot red pepper sauce

Directions:

  1. In a large saucepan, heat oil over medium-high heat. Add sausage. Cook for about 5 minutes, until browned. Transfer the sausage on a paper towel-lined plate.
  2. Wipe grease from the saucepan. Add onion, bell pepper, and green onions to saucepan. Cook for 6-7 minutes. Add garlic and cook for an additional minute.
  3. Add chicken broth and cumin to the pan. Reduce heat to a medium. Add beans and sausage to the pan. Cook for about 15 minutes, until thickened. Stir in parsley, lime juice, and red pepper sauce.
  4. Ladle soup into serving bowls and enjoy!
